PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
In a small bowl, whisk together the honey, coconut aminos, minced garlic, and grated ginger to create a thick glaze.
Place the broccoli and cauliflower florets on one half of the baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
Arrange the chicken drumsticks on the other half of the baking sheet and brush them generously with half of the prepared honey-garlic glaze.
Roast in the center of the oven for 15 minutes, then remove the sheet to toss the vegetables and flip the chicken.
Brush the remaining glaze onto the drumsticks and return to the oven for another 10-15 minutes until the chicken is caramelized and reaches an internal temperature of 165°F.
Serve the drumsticks hot with the roasted vegetables, drizzling any remaining pan juices over the top.
