Miso-Glazed Salmon with Roasted Asparagus
Flaky salmon fillets roasted with a savory miso-ginger glaze until caramelized, served alongside crisp-tender asparagus spears.
INGREDIENTS
5.5 oz salmon fillet
1 tbsp white miso paste
1 tbsp tamari
1 tsp honey
1 tsp rice vinegar
1 tsp fresh ginger
1.5 cups asparagus
1 tsp toasted sesame oil
1 tsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
0.5 tsp toasted sesame seeds
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
In a small mixing bowl, whisk together the white miso paste, tamari, honey, rice vinegar, toasted sesame oil, and freshly grated ginger until the glaze is smooth.
Place the salmon fillet on one side of the prepared baking sheet and brush the miso glaze generously over the top and sides of the fish.
On the other side of the baking sheet, toss the trimmed asparagus spears with extra virgin olive oil, sea salt, and black pepper until evenly coated.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork and the glaze has started to caramelize.
Remove from the oven and garnish the salmon with toasted sesame seeds before serving alongside the roasted asparagus.
