Step 1: Preheat the oven to 375°F (190°C) and line a small baking dish with parchment paper.
Step 2: Finely mince the yellow onion and green bell pepper so they incorporate evenly into the meat mixture.
Step 3: In a medium mixing bowl, combine the ground beef, egg, almond flour, minced onion, minced pepper, sea salt, black pepper, and garlic powder.
Step 4: Mix gently with your hands until just combined, being careful not to overwork the meat which can make it tough.
Step 5: Form the mixture into a compact rectangular loaf shape and place it in the prepared baking dish.
Step 6: Wrap the bacon slices tightly around the loaf, tucking the ends underneath the bottom.
Step 7: Brush the top and sides of the bacon-wrapped loaf with 1 tablespoon of the sugar-free BBQ sauce.
Step 8: Bake for 25 minutes, then remove from the oven and brush with the remaining 1 tablespoon of BBQ sauce.
Step 9: Return to the oven and bake for an additional 5-10 minutes, or until the internal temperature reaches 160°F and the bacon is crisp.
Step 10: Let the meatloaf rest for 5 minutes before slicing to allow the juices to redistribute.
