4.5 oz Chicken Breast
200g Cauliflower florets
150g Green Beans
1 tbsp Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
Drain the cauliflower well and mash with the ghee and a pinch of salt until creamy.
Season the chicken breast with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 6-7 minutes per side until golden and cooked through.
Remove the chicken from the pan and add the green beans and minced garlic to the same skillet.
Sauté the green beans for 4-5 minutes until tender-crisp and fragrant.
Plate the chicken alongside the cauliflower mash and green beans.
