Baked Salmon with Garlic Green Beans and Brown Rice
Oven-roasted wild salmon fillet seasoned with lemon and herbs, served alongside garlic-sautéed green beans and nutty brown rice that is perfectly crisp-tender.
INGREDIENTS
5.5 oz Wild Atlantic Salmon fillet
0.5 cup cooked Brown Rice
1.5 cups fresh Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon Juice
Salt and black pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Place the salmon fillet on the baking sheet, drizzle with half of the olive oil and the lemon juice, then season with salt and pepper.
Bake the salmon for 12 to 15 minutes until it flakes easily with a fork.
While the salmon bakes, trim the ends of the green beans and mince the garlic.
Heat the remaining olive oil in a skillet over medium heat, add the green beans, and sauté for 5 to 7 minutes until bright green.
Add the minced garlic to the skillet and sauté for another 1 to 2 minutes until the garlic is fragrant and the beans are crisp-tender.
Warm the pre-cooked brown rice in a small bowl.
Plate the salmon alongside the garlic green beans and brown rice, garnishing with an extra squeeze of lemon if desired.
