PREPARATION
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with half of the olive oil and the smoked paprika on a baking sheet.
Roast the sweet potatoes for 20-25 minutes until they are tender and slightly browned.
While the potatoes roast, heat the remaining olive oil in a non-stick skillet over medium heat.
Add the sliced turkey sausage to the skillet and brown for 3-4 minutes.
Add the fresh spinach to the skillet and sauté until it is just wilted.
