Gently mix the ingredients by hand until just combined, taking care not to overwork the meat which can make it tough.
Form the mixture into a uniform loaf shape and place it into the prepared baking dish.
In a small ramekin, whisk together the tomato paste, maple syrup, and apple cider vinegar to create the glaze.
Brush half of the glaze evenly over the top and sides of the meatloaf.
Bake for 25 minutes, then remove from the oven to brush on the remaining glaze.
Return the meatloaf to the oven and bake for another 10-15 minutes, or until the internal temperature reaches 165°F.
Allow the meatloaf to rest for 5 minutes before slicing to ensure the juices redistribute for a moist texture.
