INGREDIENTS
2 slice whole grain bread
4 oz cooked chicken breast
1 oz fresh mozzarella cheese
0.5 medium tomato
4 leaf fresh basil
1 tbsp balsamic glaze
1 tsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Season the cooked chicken breast slices with sea salt and black pepper.
Place one slice of whole grain bread on a clean surface and layer with the seasoned chicken and fresh mozzarella slices.
Add the tomato slices and fresh basil leaves on top of the cheese.
Drizzle the balsamic glaze evenly over the basil and top with the second slice of bread.
Lightly brush the outside of the sandwich with extra virgin olive oil.
Heat a non-stick skillet or panini press over medium heat and grill the sandwich for 3 to 4 minutes per side until the bread is golden and the mozzarella is gooey.
Remove from heat and let rest for one minute before slicing diagonally to serve.
