PREPARATION
Prepare the sushi rice by seasoning it with rice vinegar and letting it cool completely to room temperature.
Slice the sashimi-grade salmon, cooked shrimp, and cucumber into thin, uniform matchsticks.
Place one nori sheet on a bamboo rolling mat and spread half of the rice evenly across the bottom two-thirds of the sheet.
Layer the salmon, half of the cucumber, and avocado slices across the center of the rice bed.
Roll the nori tightly using the mat, sealing the top edge with a drop of water, then repeat the process with the shrimp and remaining ingredients.
