Cheddar Burger with Caramelized Onions
Pan-seared lean beef patty topped with sharp melted cheddar and sweet caramelized onions, served over a bed of peppery arugula.
INGREDIENTS
7 oz 93% lean ground beef
1 oz sharp cheddar cheese
0.5 medium yellow onion
1 tsp extra virgin olive oil
1 cup fresh arugula
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp balsamic vinegar
PREPARATION
Thinly slice the yellow onion into uniform half-moons.
Heat 0.5 tsp of olive oil in a skillet over medium-low heat and add the onions, cooking slowly until they are soft and golden brown.
Splash the balsamic vinegar into the onions to deglaze the pan, stir for 30 seconds, then set the onions aside.
Shape the ground beef into a thick patty and season both sides evenly with sea salt and black pepper.
Wipe the skillet and heat the remaining 0.5 tsp of oil over medium-high heat, then sear the patty for 4 to 5 minutes per side.
Place the cheddar cheese on the patty during the last minute of cooking and cover the pan to melt it completely.
Arrange the fresh arugula on a plate and place the cheesy burger patty directly on top.
Finish by piling the warm caramelized onions over the burger and serve immediately.
