While potatoes roast, heat the remaining oil in an oven-safe skillet over medium heat.
Add the ground turkey, diced onion, and bell pepper, cooking until the turkey is fully browned.
Stir in the garlic powder, smoked paprika, sea salt, black pepper, and the roasted sweet potatoes.
Add the baby spinach to the skillet and stir for 1 minute until the leaves are just wilted.
Create two small wells in the hash mixture and crack one egg into each opening.
Transfer the skillet to the oven and bake for 6 to 8 minutes until the egg whites are set.
