Garlic Herb Roasted Beef and Green Beans
Tender beef strips and crispy potatoes roasted with fragrant herbs and fresh green beans for a savory, one-pan meal that is incredibly satisfying.
INGREDIENTS
6.25 oz Top sirloin beef
0.5 medium Yukon gold potato
1 cup Fresh green beans
1 tsp Extra virgin olive oil
1 clove Garlic
0.25 tsp Dried rosemary
0.25 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Dice the potato into small half-inch cubes and trim the ends off the fresh green beans.
In a medium bowl, toss the potato cubes with half of the olive oil, rosemary, thyme, salt, and pepper until well coated.
Spread the potatoes in a single layer on the baking sheet and roast for 15 minutes until they begin to turn golden.
While the potatoes roast, slice the beef into thin strips and mince the garlic clove.
Remove the baking sheet from the oven and move the potatoes to one side, then add the beef strips and green beans to the empty space.
Drizzle the remaining olive oil and the minced garlic over the beef and beans, tossing them gently to combine.
Return the pan to the oven and roast for another 10 minutes until the beef is cooked through and the green beans are tender-crisp.
