Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with garlic-infused cauliflower mash and crisp steamed green beans, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
6.8 ounces Salmon Fillet
2 cups Cauliflower florets
1.5 cups Green beans
2 teaspoons Olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
Drain the cauliflower thoroughly and mash with minced garlic, one teaspoon of olive oil, and a pinch of salt until smooth and creamy.
Steam the green beans for 5-7 minutes until they are bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4 minutes, then flip and cook for another 3-4 minutes until the center is just opaque.
Plate the salmon over a bed of the garlic cauliflower mash and serve the steamed green beans on the side.
