PREPARATION
Heat a large skillet or wok over medium-high heat and add half of the toasted sesame oil.
Season the diced chicken breast with sea salt, black pepper, garlic powder, and ground ginger.
Add the chicken to the skillet and sear until golden brown and cooked through, then remove and set aside.
Add the remaining sesame oil to the pan along with the diced white onion and the peas and carrots mixture, sautéing until the onion is translucent.
Push the vegetables to the side of the pan, crack the egg into the center, and scramble until just set.
