PREPARATION
Press the extra firm tofu for 20 minutes to remove excess moisture and cut into uniform cubes.
In a small bowl, whisk together the peanut butter, tamari, lime juice, coconut milk, ginger, garlic, and sriracha until the sauce is smooth.
Toss the tofu cubes in half of the prepared peanut mixture and thread them onto wooden or metal skewers.
