Maple-Glazed Pecan French Toast Bake
Thick-cut whole grain bread soaked in a protein-rich custard and baked until the maple-glazed pecans form a crunchy, golden crust.
INGREDIENTS
2 slices whole grain bread
1 cup liquid egg whites
1 large egg
0.5 cup non-fat Greek yogurt
0.5 oz raw pecans
0.5 tbsp pure maple syrup
0.5 tsp ground cinnamon
0.25 tsp vanilla extract
0.13 tsp sea salt
0.5 tsp ghee
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small individual baking dish with the ghee.
Cut the whole grain bread into 1-inch cubes and arrange them evenly in the prepared baking dish.
In a medium mixing bowl, whisk together the liquid egg whites, whole egg, cinnamon, vanilla extract, and sea salt until the mixture is frothy.
Pour the egg mixture over the bread cubes, using a spoon to press the bread down so it absorbs the liquid completely.
In a small bowl, toss the raw pecans with the maple syrup until they are well coated.
Scatter the maple-glazed pecans over the top of the soaked bread cubes.
Place the dish in the oven and bake for 20-25 minutes, or until the custard is set and the top is golden brown and crisp.
Remove from the oven and let it cool for a few minutes before topping with a dollop of non-fat Greek yogurt to serve.
