Seared Sirloin Steak with Garlic Green Beans and Sweet Potato Mash
Pan-seared sirloin steak served with creamy mashed sweet potatoes and crisp-tender garlic green beans, finished with a touch of savory grass-fed ghee.
INGREDIENTS
6 oz Top Sirloin Steak (lean)
150g Sweet Potato
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Grass-fed Ghee
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in salted water for 10-12 minutes until soft.
Drain the sweet potatoes and mash them with half of the ghee until creamy.
While potatoes boil, trim the green beans and steam them for 4-5 minutes until crisp-tender.
Pat the sirloin steak dry with paper towels and season both sides with sea salt and black pepper.
Heat the olive oil in a cast-iron skillet over medium-high heat.
Sear the steak for 3-4 minutes per side for medium-rare, then remove from the pan to rest for 5 minutes.
In the same skillet, add the remaining ghee and minced garlic, sautéing for 30 seconds until fragrant.
Toss the steamed green beans in the garlic ghee for 1 minute to coat.
Slice the steak against the grain and serve alongside the sweet potato mash and garlic green beans.
