Pan-Seared Sirloin Steak with Garlic Herb Ghee
Grass-fed sirloin steak pan-seared to a juicy medium-rare and topped with a fragrant garlic-herb ghee, served alongside crisp-tender roasted asparagus.
INGREDIENTS
5 oz sirloin steak
0.25 tbsp extra virgin olive oil
0 tbsp ghee
1 clove garlic
1 tsp fresh rosemary
1 tsp fresh thyme
1 cup asparagus
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Pat the sirloin steak completely dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat and add the olive oil until it begins to shimmer.
Place the steak in the hot skillet and sear for 4-5 minutes per side without moving it, until a deep golden crust forms.
While the steak cooks, finely mince the garlic, rosemary, and thyme, then mash them into the ghee in a small bowl until well combined.
In the last 3 minutes of steak cooking, add the asparagus to the edges of the pan to lightly char and soften.
Remove the steak from the pan and immediately top with the garlic herb ghee, allowing it to melt over the meat while it rests for 5 minutes before slicing.
