PREPARATION

Place the green beans in a steamer basket over boiling water and steam for 5 minutes until crisp-tender and bright green.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat until shimmering.
Carefully place the salmon in the hot skillet and sear for 4 to 5 minutes per side until the exterior is golden and cooked to your preference.
Drain the sweet potatoes and mash them thoroughly until smooth, using a tablespoon of the cooking water if needed to reach a silky consistency.
Plate the sweet potato mash, top with the seared salmon, and serve the steamed green beans on the side.
