Herb-Roasted Pork Tenderloin with Roasted Sweet Potato and Broccoli
Tender pork tenderloin roasted with fragrant rosemary and garlic, paired with golden sweet potatoes and crisp charred broccoli.
INGREDIENTS
4.5 oz Pork Tenderloin
150g Sweet Potato
100g Broccoli
1 tbsp Olive Oil
1 clove Garlic
1 tsp fresh Rosemary
1 tsp fresh Thyme
PREPARATION
Preheat your oven to 400°F and line a large sheet pan with parchment paper for easy cleanup.
Peel and cube the sweet potato into bite-sized pieces and chop the broccoli into uniform florets.
In a bowl, toss the vegetables with half of the olive oil, sea salt, and black pepper.
Rub the pork tenderloin with the remaining olive oil, minced garlic, chopped rosemary, and thyme.
Place the pork and sweet potatoes on the prepared baking sheet and roast for 10 minutes.
Add the broccoli to the pan and continue roasting for another 12 to 15 minutes until the pork reaches an internal temperature of 145°F.
Remove from the oven and let the pork rest for 5 minutes before slicing to keep it juicy.
