Garlic-Herb Roasted Salmon with Asparagus
Oven-roasted salmon fillets seasoned with aromatic garlic and fresh herbs, served alongside tender, charred asparagus spears for a vibrant and nutrient-dense meal.
INGREDIENTS
7 oz Salmon fillet
10 medium Asparagus spears
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 tsp Fresh thyme
1 tsp Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 medium Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy cleanup.
Mince the garlic cloves finely and strip the leaves from the fresh thyme and rosemary sprigs, chopping them roughly.
Trim the woody ends off the asparagus spears and place them on one side of the baking sheet.
Place the salmon fillet on the other side of the baking sheet, skin-side down.
Drizzle the olive oil over both the salmon and the asparagus, then sprinkle evenly with the minced garlic, chopped herbs, sea salt, and black pepper.
Use your hands or a brush to ensure the salmon is well-coated and toss the asparagus to distribute the oil and seasonings.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender-crisp.
Remove from the oven and immediately squeeze the fresh lemon juice over the salmon and vegetables before serving warm.
