Herb-Crusted Salmon with Roasted Vegetables
Salmon fillet baked with a golden herb crust, served alongside vibrant roasted broccoli and peppers for a crisp, satisfying finish.
INGREDIENTS
6.5 oz salmon fillet
1 cup broccoli florets
1 cup red bell pepper
2 tsp extra virgin olive oil
1 tbsp dijon mustard
1 tbsp fresh parsley
0.25 tsp sea salt
0.25 tsp black pepper
0.5 whole lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Place the broccoli florets and sliced red bell pepper on the baking sheet, drizzle with 1 teaspoon of olive oil, and sprinkle with half of the salt and pepper.
Pat the salmon fillet dry with a paper towel and place it on the baking sheet next to the vegetables.
Spread the Dijon mustard evenly over the top of the salmon and press the chopped fresh parsley into the mustard to create a flavorful herb crust.
Drizzle the remaining teaspoon of olive oil over the salmon and roast for 12 to 15 minutes until the salmon flakes easily with a fork and the vegetables are tender.
Remove from the oven and squeeze the fresh lemon juice over the salmon and roasted vegetables before serving hot.
