Garlic Herb Roasted Pork Loin
Tender pork loin roasted with a fragrant garlic and rosemary rub, served alongside crisp-tender green beans for a satisfying and savory meal.
INGREDIENTS
7 oz Pork loin
1 tbsp Olive oil
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1.5 cups Green beans
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, sea salt, and black pepper until well combined.
Place the pork loin on one side of the prepared baking sheet and rub half of the garlic-herb mixture over all sides of the meat.
Spread the trimmed green beans on the other side of the baking sheet and toss them with the remaining herb mixture until evenly coated.
Roast in the oven for 25 to 30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
Remove the tray from the oven and let the pork rest for 5 minutes to allow the juices to redistribute before slicing into medallions.
Drizzle the lemon juice over the pork and green beans just before serving to brighten the flavors.
