Seared Salmon with Steamed Broccoli and Garlic Cauliflower Mash
Pan-seared salmon fillets served over a creamy garlic cauliflower mash with tender steamed broccoli and a finishing touch of zesty lemon.
INGREDIENTS
5 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Broccoli Florets
1 tsp Olive Oil
0.5 tsp Ghee
1 clove Garlic
PREPARATION
Place the cauliflower and broccoli florets in a steamer basket over boiling water and steam until tender, approximately 8-10 minutes.
While the vegetables steam, pat the salmon fillet dry and season with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Remove the steamed cauliflower and broccoli from the heat.
Transfer the cauliflower to a food processor or bowl and blend with the ghee and minced garlic until the texture is smooth and creamy.
Serve the seared salmon over the garlic cauliflower mash with the steamed broccoli on the side, garnished with a fresh lemon wedge if desired.
