Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared sockeye salmon paired with creamy mashed sweet potatoes and snap-fresh green beans, finished with a squeeze of lemon and toasted garlic.
INGREDIENTS
7 ounces Sockeye Salmon
120 grams Sweet Potato
100 grams Green Beans
1.5 teaspoons Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them in a bowl until smooth, seasoning with a pinch of sea salt.
Heat half of the olive oil in a skillet over medium heat and add the green beans and minced garlic.
Sauté the beans for 5-6 minutes until they are bright green and slightly crisp, then remove from the pan.
Season the salmon fillet with salt and pepper on both sides.
Add the remaining olive oil to the same skillet over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is golden and crispy.
Flip the salmon and cook for an additional 2-3 minutes until cooked through to your preference.
Serve the salmon immediately alongside the sweet potato mash and garlic green beans.
