Loaded Baked Potatoes with Crispy Bacon
Tender oven-baked potato stuffed with savory ground turkey and topped with crispy bacon, melted cheddar, and a dollop of cool Greek yogurt for a creamy finish.
INGREDIENTS
1 medium Potato
0 tsp Olive oil
0.25 tsp Sea salt
4 oz Ground turkey
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 slice Nitrate-free bacon
0.25 oz Sharp cheddar cheese
0.25 cup Nonfat Greek yogurt
1 tbsp Fresh chives
1 cup Broccoli florets
PREPARATION
Preheat your oven to 400°F (200°C).
Scrub the potato thoroughly, prick it several times with a fork, and rub the skin with olive oil and sea salt.
Place the potato directly on the oven rack and bake for 45 to 50 minutes until the skin is crisp and the inside is tender.
While the potato bakes, cook the bacon in a skillet over medium heat until crispy, then remove and crumble into small bits.
In the same skillet, drain most of the bacon fat and add the ground turkey, seasoning with garlic powder and black pepper; cook until browned and fully cooked through.
Steam the broccoli florets in a steamer basket for 4 to 5 minutes until they are bright green and fork-tender.
Once the potato is done, slice it down the center and fluff the interior with a fork.
Stuff the potato with the cooked ground turkey and steamed broccoli, then sprinkle the shredded cheddar cheese over the top.
Return the potato to the oven for 2 to 3 minutes until the cheese is completely melted.
Top with a dollop of Greek yogurt, the crumbled bacon, and fresh chives before serving.
