Garlic Herb Butter Pan-Seared Steak
Juicy sirloin steak pan-seared to a golden crust and basted with aromatic garlic-herb ghee, served alongside crisp roasted asparagus.
INGREDIENTS
4.5 oz grass-fed sirloin steak
0.5 tbsp ghee
2 cloves garlic
1 sprig fresh rosemary
1 sprig fresh thyme
0.5 tsp sea salt
0.25 tsp black pepper
1 cup asparagus spears
0.5 tsp avocado oil
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking and pat it completely dry with paper towels.
Season both sides of the steak generously with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat and add the avocado oil.
Once the oil is shimmering, place the steak in the pan and sear for 3-4 minutes until a deep golden-brown crust forms.
Flip the steak and immediately add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet slightly and use a large spoon to continuously baste the steak with the melted herb-infused ghee for another 3-4 minutes for medium-rare.
Remove the steak from the pan and let it rest on a cutting board for at least 5-10 minutes to lock in the juices.
While the steak rests, toss the asparagus in the same pan with the remaining herb ghee for 3-5 minutes until tender-crisp.
Slice the steak against the grain and serve immediately with the vibrant asparagus.
