PREPARATION
Heat a non-stick skillet over medium-high heat and add the turkey bacon slices.
Cook the bacon until it reaches your desired level of crispiness, then remove from the pan and chop into bite-sized pieces.
Lower the heat to medium and add one teaspoon of olive oil to the skillet.
Add the baby spinach to the pan and sauté for 1-2 minutes until just wilted, then move it to the side of the pan.
In a small bowl, whisk together the egg whites and the whole egg until well combined.
