Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.

Peel and slice the carrots into 1/2-inch thick rounds. Cut the broccoli into bite-sized florets.
Toss the carrots and broccoli on one side of the baking sheet with 1 teaspoon of olive oil, half the sea salt, and half the black pepper.
Pat the chicken drumsticks dry with a paper towel to ensure the skin gets crispy. Rub them with the remaining 1 teaspoon of olive oil and the rest of the salt and pepper.
Place the chicken on the other side of the baking sheet and roast for 15 minutes.
