PREPARATION
Preheat your oven to 425°F and lightly grease a baking sheet with the olive oil.
In a shallow bowl, whisk the egg until smooth. In a separate shallow dish, combine the panko breadcrumbs, parmesan cheese, garlic powder, oregano, sea salt, and black pepper.
Dredge the chicken breast into the egg wash, allowing any excess to drip off, then press firmly into the panko mixture until evenly coated on all sides.
Place the coated chicken onto the prepared baking sheet and bake for 15 minutes until the crust is firm and starting to brown.
