INGREDIENTS
5.5 oz Wild Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
0.5 tsp Garlic Powder
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
During the last 5 minutes of the cauliflower steaming, add the green beans to the steamer basket and cook until bright green and crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl; add the garlic powder and half of the olive oil, then blend or mash until completely smooth.
Season the salmon fillet with a pinch of salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until golden and cooked through.
Plate the salmon over a generous bed of cauliflower mash with the green beans on the side.
Drizzle the entire dish with fresh lemon juice before serving.
