PREPARATION
Preheat your oven to 400°F and lightly coat a rimmed baking sheet with the extra virgin olive oil.
In a shallow dish, whisk the egg until smooth, and in a separate bowl, combine the almond flour, grated parmesan, sea salt, black pepper, garlic powder, and dried oregano.
Dredge the chicken breast into the egg wash, then press it firmly into the almond flour mixture until it is evenly and thickly coated on all sides.
Place the chicken on the prepared baking sheet and bake for 15 minutes or until the almond crust is set and lightly golden.
