Seared Salmon Fillet with Garlic Green Beans and Brown Rice
Pan-seared salmon served with garlic-sautéed green beans and fluffy brown rice, finished with a squeeze of zesty lemon.
INGREDIENTS
4.75 oz Salmon Fillet
0.5 cup Cooked Brown Rice
1.25 cup Green Beans
1.5 tsp Extra Virgin Olive Oil
2 cloves Garlic
PREPARATION
Cook brown rice according to package directions or use pre-cooked rice.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for an additional 2-3 minutes until desired doneness is reached, then remove from pan.
In the same skillet or a new one, heat the remaining oil and sauté minced garlic for 30 seconds until fragrant.
Add the green beans and a tablespoon of water, covering the pan for 2 minutes to steam-sauté until crisp-tender.
Plate the salmon over the brown rice with the garlic green beans on the side and finish with a squeeze of fresh lemon.
