Garlic Herb Steak with Roasted Asparagus
Pan-seared sirloin steak basted in fragrant garlic ghee, served alongside tender roasted asparagus for a meal that is satisfyingly savory.
INGREDIENTS
4 oz Sirloin steak
1 cup Asparagus
0.5 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Trim the woody ends off the asparagus and toss with 0.5 tbsp of ghee and a pinch of sea salt.
Spread the asparagus in a single layer on the baking sheet and roast for 12-15 minutes until tender.
Pat the sirloin steak dry with paper towels and season both sides generously with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until it is very hot.
Place the steak in the skillet and sear for 3-4 minutes per side for a medium-rare finish.
Reduce the heat to medium and add the remaining 0.5 tbsp of ghee, smashed garlic cloves, and rosemary to the pan.
Tilt the skillet and use a spoon to baste the steak with the melting garlic-herb ghee for about 1 minute.
Remove the steak from the pan and let it rest for 5 minutes before slicing and serving with the roasted asparagus.
