6 oz Top sirloin steak
1.5 cups Asparagus
0.5 tbsp Grass-fed butter
1 tsp Extra virgin olive oil
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Remove steak from fridge 20 minutes before cooking and season both sides with sea salt and black pepper.
Heat olive oil in a cast-iron skillet over medium-high heat until shimmering.
Place steak in the skillet and sear for 4-5 minutes per side for medium-rare, or until your preferred doneness.
During the last 2 minutes of cooking, add the butter, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan and spoon the foaming, herb-infused butter over the steak repeatedly to baste.
Remove steak to a plate to rest; add asparagus to the same pan and sauté for 4-5 minutes until bright green and tender.
Serve the rested steak with the asparagus, drizzling any remaining pan juices over the top.
