120g Sweet Potato
150g Fresh Green Beans

PREPARATION
Peel and cube the sweet potato, then boil in a small pot of water for 10-12 minutes until fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until the skin is crisp and the flesh is opaque.
