Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of lemon for a buttery-soft texture.
INGREDIENTS
6.5 oz Salmon Fillet
150g Sweet Potato
100g Green Beans
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato then boil in a pot of water until fork-tender.
Drain the sweet potato and mash thoroughly until smooth, adding a pinch of sea salt if desired.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans and minced garlic until they are bright green and crisp-tender.
Remove the green beans from the skillet and set aside.
Add the remaining olive oil to the skillet and increase the heat slightly.
Season the salmon fillet with salt and pepper then sear in the hot skillet for 4 to 5 minutes per side until the exterior is golden and the fish flakes easily.
Plate the salmon over the bed of sweet potato mash and serve with the garlic green beans on the side.
