Garlic Herb Butter Steak with Asparagus
Pan-seared sirloin basted in aromatic garlic-herb ghee, served alongside crisp-tender asparagus for a savory and satisfying meal.
INGREDIENTS
6 oz grass-fed sirloin steak
0.25 tbsp ghee
1 cup asparagus spears
2 cloves garlic
1 sprig fresh rosemary
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp lemon juice
PREPARATION
Pat the steak dry with paper towels and season both sides evenly with sea salt and black pepper.
Heat a heavy cast-iron skillet over medium-high heat until very hot, then add half the ghee.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare, or until your desired doneness is reached.
During the last 2 minutes of cooking, add the remaining ghee, smashed garlic cloves, and rosemary sprig to the pan.
Tilt the pan slightly and spoon the melting herb-infused ghee over the steak repeatedly to baste it.
Remove the steak from the pan and let it rest on a cutting board for at least 5 minutes to lock in the juices.
Add the asparagus to the same skillet and sauté in the residual pan juices for 3-5 minutes until bright green and tender.
Finish the asparagus with a squeeze of fresh lemon juice and serve immediately alongside the rested steak.
