Succulent shrimp and tender soba noodles stir-fried with a tangy tamarind-lime sauce, finished with a crunch of toasted peanuts and fresh bean sprouts.
INGREDIENTS
6 oz Shrimp
1.5 oz Soba noodles
1 large Egg
0.5 tbsp Avocado oil
1 cup Bean sprouts
2 tbsp Green onions
1 clove Garlic
1 tbsp Tamari
1 tsp Fish sauce
1 tsp Honey
1 tbsp Lime juice
0.5 tbsp Peanuts
0.25 tsp Red pepper flakes
PREPARATION
Cook the soba noodles in boiling water for 4-5 minutes until al dente, then drain and rinse with cold water.
In a small bowl, whisk together the tamari, fish sauce, honey, lime juice, and red pepper flakes to create the sauce.
Heat the avocado oil in a large skillet or wok over medium-high heat and sauté the minced garlic for 30 seconds.
Add the shrimp to the skillet and cook for 2-3 minutes until pink and opaque, then push them to one side of the pan.
Crack the egg into the empty side of the skillet and scramble it quickly until just set.
Add the cooked noodles, bean sprouts, and prepared sauce to the pan, tossing everything together for 1-2 minutes until heated through.
Garnish the dish with sliced green onions and crushed peanuts before serving hot.
