5.5 oz Salmon Fillet
1 medium Sweet Potato
2 cups Fresh Spinach
1 tbsp Extra Virgin Olive Oil
2 tsp Ghee
2 cloves Garlic, minced
1 tsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water until fork-tender, about 12-15 minutes.
Drain the sweet potatoes and mash them thoroughly with the ghee and a pinch of sea salt until creamy.
While potatoes cook, pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 3-4 minutes until the center is just opaque and the exterior is golden.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant, then toss in the spinach.
Cook the spinach for 1-2 minutes until just wilted, then finish with a squeeze of lemon juice.
