PREPARATION
Preheat your oven or air fryer to 400°F.
Toss the cubed sweet potatoes with half of the olive oil and a pinch of sea salt, then roast for 15-20 minutes until golden and tender.
While the potatoes roast, heat the remaining olive oil in a non-stick skillet over medium heat.
Add the diced turkey breast and spinach to the skillet, sautéing until the spinach is wilted and the turkey is warmed through.
