PREPARATION
Preheat your oven to 400°F and toss the cubed sweet potatoes with half of the olive oil and a pinch of salt.
Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes until tender and slightly browned.
While potatoes roast, place turkey bacon in a non-stick skillet over medium heat and cook until crisp, then remove and chop into bite-sized pieces.
In the same skillet, add the remaining olive oil and the baby spinach, sautéing for 1-2 minutes until just wilted.
Lower the heat slightly and pour in the egg whites, stirring constantly with a spatula until they are set and fluffy.
