Seared Salmon Fillet with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served alongside garlic-scented green beans and a cauliflower mash, finished with a bright squeeze of vibrant lemon.
INGREDIENTS
6 ounces Wild Atlantic Salmon
2.5 cups Cauliflower florets
1 cup Green Beans
2 teaspoons Extra Virgin Olive Oil
2 tablespoons Nonfat Greek Yogurt
2 cloves Garlic, minced
1/2 Lemon, juiced
Salt and Black Pepper to taste
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While the cauliflower steams, pat the salmon fillet dry with paper towels and season both sides with salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily with a fork.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining teaspoon of olive oil, the green beans, and the minced garlic.
Sauté the green beans for 5-6 minutes until they are tender-crisp and the garlic is fragrant.
Transfer the steamed cauliflower to a blender or food processor along with the Greek yogurt and a pinch of salt.
Pulse until the cauliflower reaches a smooth, mash-like consistency.
Plate the silky cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side with a fresh squeeze of lemon juice.
