Place the cubed sweet potato and sliced carrots on one side of the baking sheet, drizzling with half of the herb oil mixture and tossing to coat.
Pat the chicken breast dry and place it on the other side of the pan, rubbing the remaining herb oil mixture over both sides of the meat.
Roast in the oven for 15 minutes, then carefully remove the pan and add the broccoli florets to the center, tossing them with any juices on the pan.
