Seared Salmon with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over garlic cauliflower mash and steamed green beans, finished with a dollop of melty ghee.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower
1.5 cups Green Beans
1 tablespoon Ghee
2 tablespoons Non-fat Greek Yogurt
2 cloves Garlic
PREPARATION
Steam the cauliflower and garlic cloves in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
Transfer the steamed cauliflower and garlic to a food processor along with the Greek yogurt and half of the ghee, then blend until smooth and creamy.
Steam the green beans for 5 to 7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat the remaining ghee in a cast-iron or non-stick skillet over medium-high heat until shimmering.
Place the salmon in the skillet and sear for 4 minutes, then flip and cook for another 3 to 4 minutes until the exterior is golden-brown.
Spread the cauliflower mash onto a plate, top with the seared salmon, and serve alongside the steamed green beans.
