Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic cauliflower mash with a side of steamed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1.5 cups Cauliflower Florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10 minutes.
While cauliflower steams, pat the salmon dry and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes skin-side down until crisp.
Flip the salmon and cook for another 3 minutes until cooked through, then remove from heat.
Steam the green beans for 5 minutes until they are bright green and tender-crisp.
Transfer the steamed cauliflower to a blender or bowl with the minced garlic and Greek yogurt, then process until smooth and creamy.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the green beans on the side with a fresh lemon wedge.
