Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with a creamy garlic cauliflower mash and crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 tbsp Nonfat Plain Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer steamed cauliflower to a bowl or food processor, adding the ghee, Greek yogurt, and minced garlic.
Mash or blend the cauliflower until smooth and creamy, seasoning with salt to taste.
Serve the seared salmon over a bed of garlic mashed cauliflower with the steamed green beans on the side.
