Garlic Herb Roasted Beef Tenderloin
Beef tenderloin roasted with a fragrant garlic-herb crust, served alongside crisp-tender asparagus for a succulent and savory dinner.
INGREDIENTS
6 oz Beef tenderloin
1 tsp Olive oil
1 tsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
1.5 cups Asparagus
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 425°F (220°C).
Finely mince the garlic, fresh rosemary, and fresh thyme.
In a small bowl, combine the ghee with the minced herbs, half of the sea salt, and half of the black pepper.
Rub the herb-ghee mixture evenly over all sides of the beef tenderloin.
Toss the asparagus spears on a baking sheet with the olive oil and the remaining sea salt and black pepper.
Heat an oven-safe skillet over medium-high heat and sear the beef for 2 minutes per side until a golden crust forms.
Place the skillet in the oven (or move beef to the baking sheet) and roast for 12-15 minutes until the internal temperature reaches 135°F for medium-rare.
Remove from the oven and let the beef rest for 5 minutes before slicing into thick medallions.
