Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
140g Sweet Potato
100g Green Beans
1 clove Garlic
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Lemon Juice
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 10-12 minutes.
While potatoes boil, heat half the olive oil in a skillet over medium heat and sauté the green beans with minced garlic until tender-crisp.
Pat the salmon fillet dry and season with a pinch of sea salt and black pepper.
Heat the remaining olive oil in a separate non-stick pan over medium-high heat.
Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3 minutes until the center is just opaque.
Drain the sweet potatoes and mash them with the Greek yogurt until smooth and creamy.
Plate the salmon alongside the mash and green beans, garnishing with a fresh squeeze of lemon juice.
