2 cups Cauliflower florets
1 head Garlic
0.25 cup Greek yogurt
0.5 tbsp Olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh chives
PREPARATION
Preheat your oven to 400°F.
Slice the top off the garlic head to expose the cloves, wrap it in foil, and roast for 35 minutes until the cloves are soft and golden.
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until they are very tender.
While the cauliflower steams, season the chicken breast with half of the salt and pepper.
Heat the olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until fully cooked.
Squeeze the roasted garlic cloves out of their skins and into a food processor.
Add the steamed cauliflower, Greek yogurt, and the remaining salt and pepper to the food processor and blend until the mixture is smooth and creamy.
